Spinach Chickpea Pasta with KOH Spinach Powder

Ingredients:
- 200g spaghetti
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 cup cooked chickpeas
- 1 tsp KOH spinach powder
- 2 cups fresh spinach
- ¼ cup grated cheese (parmesan or your choice)
- ½ cup water (reserved pasta water works best)
- Salt, to taste
- 1 tbsp lemon juice
Instructions:
- Cook the Spaghetti:
- Boil spaghetti in salted water according to package instructions. Reserve ½ cup of pasta water before draining.
- Prepare the Spinach Sauce:
- Heat olive oil in a pan over medium heat. Sauté minced garlic until fragrant.
- Add fresh spinach and cook until wilted. Stir in chickpeas and cook for 2-3 minutes.
- Blend the Sauce:
- Transfer the spinach-chickpea mixture to a blender or food processor. Add KOH spinach powder, grated cheese, lemon juice, salt, and reserved pasta water. Blend until smooth.
- Mix the Pasta:
- Return the cooked spaghetti to the pan. Pour the spinach sauce over it and toss well until evenly coated.
- Serve:
- Garnish with more grated cheese and a drizzle of olive oil. Serve warm.
