Spinach Chickpea Pasta with KOH Spinach Powder


Ingredients:

  • 200g spaghetti
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 cup cooked chickpeas
  • 1 tsp KOH spinach powder
  • 2 cups fresh spinach
  • ¼ cup grated cheese (parmesan or your choice)
  • ½ cup water (reserved pasta water works best)
  • Salt, to taste
  • 1 tbsp lemon juice

Instructions:

  1. Cook the Spaghetti:
    • Boil spaghetti in salted water according to package instructions. Reserve ½ cup of pasta water before draining.
  2. Prepare the Spinach Sauce:
    • Heat olive oil in a pan over medium heat. Sauté minced garlic until fragrant.
    • Add fresh spinach and cook until wilted. Stir in chickpeas and cook for 2-3 minutes.
  3. Blend the Sauce:
    • Transfer the spinach-chickpea mixture to a blender or food processor. Add KOH spinach powder, grated cheese, lemon juice, salt, and reserved pasta water. Blend until smooth.
  4. Mix the Pasta:
    • Return the cooked spaghetti to the pan. Pour the spinach sauce over it and toss well until evenly coated.
  5. Serve:
    • Garnish with more grated cheese and a drizzle of olive oil. Serve warm.
