Moringa Pasta Salad

Ingredients:
For the Dressing:
- 1 cup yogurt
- 1 tbsp honey
- 1 tbsp lemon juice
- 1 tsp KOH moringa powder
- Salt and pepper, to taste
For the Salad:
- 200g cooked pasta (penne or fusilli work well)
- 1 cucumber, diced
- ½ cup each of diced red, yellow, and green bell peppers
- 1 small zucchini, diced
- 1 jalapeño, finely chopped (adjust to spice preference)
- 1 tomato, diced
- 1 small red onion, finely sliced
Instructions:
- Prepare the Dressing:
- In a bowl, mix yogurt, honey, lemon juice, KOH moringa powder, salt, and pepper until smooth. Adjust seasoning as needed.
- Assemble the Salad:
- In a large mixing bowl, combine cooked pasta, cucumber, bell peppers, zucchini, jalapeño, tomato, and onion.
- Add the Dressing:
- Pour the moringa-yogurt dressing over the salad. Toss gently to ensure everything is well coated.
- Serve:
- Refrigerate for 15-20 minutes for the flavors to meld, then serve chilled.
