Moringa Pasta Salad


Ingredients:

For the Dressing:

  • 1 cup yogurt
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • 1 tsp KOH moringa powder
  • Salt and pepper, to taste

For the Salad:

  • 200g cooked pasta (penne or fusilli work well)
  • 1 cucumber, diced
  • ½ cup each of diced red, yellow, and green bell peppers
  • 1 small zucchini, diced
  • 1 jalapeño, finely chopped (adjust to spice preference)
  • 1 tomato, diced
  • 1 small red onion, finely sliced

Instructions:

  1. Prepare the Dressing:
    • In a bowl, mix yogurt, honey, lemon juice, KOH moringa powder, salt, and pepper until smooth. Adjust seasoning as needed.
  2. Assemble the Salad:
    • In a large mixing bowl, combine cooked pasta, cucumber, bell peppers, zucchini, jalapeño, tomato, and onion.
  3. Add the Dressing:
    • Pour the moringa-yogurt dressing over the salad. Toss gently to ensure everything is well coated.
  4. Serve:
    • Refrigerate for 15-20 minutes for the flavors to meld, then serve chilled.
