Dehydrated Tomato Pasta
Ingredients:
- 200 grams (7 oz) pasta of your choice (e.g., spaghetti, penne)
- 1 cup Koh Foods dehydrated tomatoes
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 cup vegetable or chicken broth
- 1/2 cup fresh basil leaves, chopped
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Optional: red pepper flakes for a bit of heat
Instructions:

Rehydrate the Dehydrated Tomatoes:
- Place the dehydrated tomatoes in a bowl and cover them with warm water.
- Let them sit for about 20 minutes until they are rehydrated and plump.
- Drain the tomatoes and set them aside.

Cook the Pasta:
- Bring a large pot of salted water to a boil.
- Add the pasta and cook according to the package instructions until al dente.
- Drain the pasta, reserving about 1/2 cup of the pasta cooking water.

Prepare the Sauce:
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and chopped onion, sautéing until the onion is translucent and the garlic is fragrant (about 2-3 minutes).
- Add the rehydrated tomatoes to the skillet and sauté for another 2-3 minutes.

Simmer the Sauce:
- Pour in the vegetable or chicken broth, stirring to combine.
- Let the mixture simmer for about 10 minutes, allowing the flavors to meld together.
- If the sauce looks too thick, add a bit of the reserved pasta cooking water to reach your desired consistency.

- Add the cooked pasta to the skillet, tossing to coat it evenly with the sauce.
- Stir in the chopped fresh basil and grated Parmesan cheese.
- Season with salt, pepper, and red pepper flakes (if using), to taste.
- Serve immediately, garnished with additional Parmesan cheese and basil if desired.
